For All You Polenta Lovers Out There...

This is my new fave! Quick, easy, and uses everyday ingredients you probably already have in your kitchen. I loved it so much, I had to share.

Polenta With Creamy Tomato Sauce:

1/2 C. minced Onion
4 T. butter
1 clove minced garlic
1/4 C. dry wine
3 T. tomato paste
1/2 C. chicken broth
4 T. cream
1/2 C. grated Parmesan
Salt & pepper to taste
pre-cooked packaged polenta (I used San Genarro)

Saute onion in butter over medium heat, add garlic. Stir in wine, tomato paste and chicken broth. Simmer 5 minutes. Remove from heat and stir in cream, salt & pepper to taste. Cut the polenta into 1/2" thick slices and arrange in lightly greased 9X13 baking dish. Spoon sauce over polenta and sprinkle with Parmesan. Bake at 350 degrees for 15 minutes.
